Last week, I posted my thoughts on the first Dorm Room dinner at 33 Wine Shop & Tasting Bar. Now, Monarch chef Josh Galliano has written an awesome behind-the-scenes look at his dinner, including lessons learned the hard way and commentary on each of the dishes.
