​Congrats to Josh Galliano, executive chef at Monarch (7401 Manchester Road; website). Galliano is featured in the September issue of Southern Living magazine, which is currently available on newsstands. The one-page profile includes some friendly trash-talking between Galliano, a LSU grad, and author Carolanne Griffith Roberts, an Alabama fan, as well as kind words about his cooking and some tips from the chef himself.
