#83: Hot Salami (Salam de Testa) at Gioia's Deli
| Ian Froeb |
The flavor is earthy, meaty, peppery -- everything you'd want from top-of-the-line lunchmeat. The sandwich itself doesn't get in the way of the meat, adding only cheese (pepperjack, in my case, or Provel), lettuce and tomato. Don't even think of it as a sandwich. Really, it's just a handy carrying case for Gioia's unique, delicious salami.

I'm counting down -- in no particular order -- 100 of my favorite dishes in St. Louis. Some are well-known, others obscure. Some are expensive, others dirt cheap. All of them, I guarantee, are delicious. Please do not hesitate to share your own favorites via the comments thread.
