#56: The Lemon Drop Cupcake at the Cup

The Lemon Drop cupcake from the Cup
When the cupcake trend (finally) invaded St. Louis three years ago, the Cup (known then as the Cupcakery) was at the vanguard. Today, there are several cupcake-centric bakeries in St. Louis, but the Cup -- specifically, its Lemon Drop cupcake -- remains my favorite.

The Cup's cupcakes (all of them, not just the Lemon Drop) are superb for two reasons. One, attention is paid not only to the buttercream frosting but to the cake itself, which is moist and flavorful. Second, the frosting is attractive but not out-of-control. The ratio of buttercream to cake is ideal.

The Lemon Drop appeals to me for its simplicity of flavor: lemon candy, lemon buttercream, lemon cake and, at its center, a lemon filling. This is sweetened lemon, of course, but with enough of lemon's natural citric character to make the cupcake indulgent without being cloying.
