Albóndigas caseras con patatas is an entrée-sized portion of the albóndigas from the tapas menu, with more potatoes (proportionally as well as in number). Thus, it comes fairly close to combining my two favorites, albeit without the spicy sauce from the patatas bravas.
The potatoes are still there, though, the exteriors golden-brown and crisp, the interior yielding but not so soft as to go mushy in the sauce. The meatballs are fork-tender from their exteriors all way through to their pale pink centers. Their flavor is mild -- not overly meaty, that is -- and perfectly perked up by the white wine sauce.
On the off chance that some of that sauce remains once your albóndigas and potatoes are gone, there is always plenty of warm bread on the table to mop up the rest.
