Restaurant Tidbits from Brasserie by Niche, Franco, Pi

Now you can enjoy the onion soup at Brasserie by Niche seven days a week.
A few notes from the last week:

- Brasserie by Niche announced via Twitter this weekend that it will now be open seven days a week.

Smart move: By all accounts, Gerard Craft's French restaurant, which landed its onion soup on my list of 100 Favorite Dishes and its cassoulet on the top ten dishes of 2010, remains wildly popular over a year after its opening.

- Franco promoted Chris Williams from sous chef to executive chef, replacing Matt Abeshouse. If you haven't visited Franco recently, now you have an excuse to go.

Though, really, you don't need an excuse. Since it opened four years ago, Franco has been consistently excellent -- to the point that I now think it is one of our most underrated restaurants. (Its cassoulet was a recent entry on my 100 Favorite Dishes.)

- The St. Louis Business Journal reports that Chris Sommers is scouting spots for a downtown location of Pi. The pizza juggernaut already has locations in the Delmar Loop, the Central West End and Kirkwood as well as a food truck and, opening soon, a location in Washington, D.C.

Update: (Tuesday, 1.11, 11:50 a.m.) As a commenter noted, I forgot to include Pi's carry-out only location in Chesterfield.

Indeed! I did forget it. Too many to keep track of, apparently. Thanks!
