Bailey's Range Now Open for Lunch
Last week, Dave Bailey's newest venture, Bailey's Range, debuted with its soft opening in downtown St. Louis. On Wednesday, Oct. 26, the restaurant began offering lunchtime hours as well. Gut Check caught up with Bailey for a glimpse into the brand new burger-and-shake eatery's offerings.

"The goal with this place is to have a burger and shake restaurant that I could really be proud of, ergo the grass-fed beef, baking the buns ourselves and making all the sauces and even ketchup from scratch," says Bailey.
Overall, the warm and inviting set-up beckons the childhood creature comforts established by Bailey while maintaining a casual modern edge appropriate for its downtown location. The lofty, high-ceilinged space that was formerly the home of City Grocer, houses two glowing floors' worth of seating with fresh flowers on every table, a shiny new bar with a variety of booze and brews on tap, a colorful refrigerated case of 50+ bottled sodas, and an open viewing of the kitchen through hanging window panes, revealing both the staff of Bailey's Range and commissary for his other restaurants working side-by-side.

"We make absolutely everything we can by ourselves," says Bailey. "We utilize really good local ingredients in creative ways, and there are no chemicals, no binders and no stabilizers in our ice creams."

The menu, a collaborative effort between Bailey and two of his chefs, consists of three parts -- food, drinks and ice cream. Burger options include the likes of beef, pork, chicken, bison, lamb and veggie ranging from $6 to $12 with additional weekly special offerings in a "burger battle." Bailey's current personal favorites include the Paris burger ($12) smothered in oyster, crimini and shiitake mushrooms, caramelized shallots, arugula and Taleggio and the Carolina burger topped with smoked pork shoulder, house barbecue sauce and sweet and spicy slaw. The food menu also includes snacks, salads and kid-friendly options.

A menu of over a dozen scatch-made ice cream flavors can be ordered by the scoop or turned into a sundae, split, shake or crepe. The teeming drink menu includes the aforementioned multitude of sodas and beers along with options of wine and boozy lemonade, ice picks, shakes and floats including one of Bailey's favorites, the chocolate-covered raspberry ($9), featuring a double shot of St. Louis framboise and chocolate ice cream. Bailey's Range is open from Wednesday through Saturday from 11 a.m. to 1 a.m. and Sunday from 11 a.m. to midnight. When asked how late the kitchen turns out eats, Bailey responds, "If the restaurant's open, the kitchen's open. That's the same for all of our restaurants. I don't believe in closing the kitchen early."
