Chef Shuffle: News from Modesto, Bailey's Range and Franco

Michael Warhover, former executive chef of Baileys' Range (920 Olive Street, 314-241-8121), announced he's now the executive chef of Modesto (5257 Shaw Avenue, 314-772-8272). Peter Clark, a new addition to the St. Louis dining scene via the West Coast, replaces Warhover as executive chef of Bailey's Range. Warhover wasn't available to comment when Gut Check phoned Modesto, but we'll update with more as we learn it.

Meanwhile, Modesto's former executive chef Grace Dinsmoor has temporarily joined the team at Franco (1535 South Eighth Street, 314-436-2500). When reached by phone this afternoon, Dinsmoor confirmed her departure from Modesto, and shared her current plans. "The decision to leave Modesto wasn't to go to Franco," says Dinsmoor. "I left Modesto over creative differences. I'm exploring other options. I have other prospects in St. Louis and have scheduled several meetings." Though Dinsmoor's stint at Franco is transitional, Franco owner Tom Schmidt says the restaurant is extremely happy to have her "very capable hands" contributing in the kitchen.
