Tidbits: Farmhaus Nose-to-Tail Dinner, Niche Lobster Rolls

- Farmhaus (3257 Ivanhoe Avenue; 314-647-3800) has announced a special "Nose-to-Tail" dinner on Tuesday, August 21. Chef de cuisine Andrew Jennrich is putting together the dinner's tasting menu, which will feature locally raised pork. Among the dishes promised by general manager Eric Scholle are pig-heart pastrami, a pig-tongue and pressed-ear terrine and pig-liver caramel. Scholle will plan wine or beer pairings for guests.

The cost, which includes wine/beer pairings and gratuity, is $110. Instead of reservations, Farmhaus is selling 50 tickets for the dinner through Brown Paper Bag Tickets.

- It's lobster-roll season in New England, and an article in Friday's Wall Street Journal highlights the best of this classic American sandwich. Not only does the article single out the best spots in New England for a lobster roll, it also notes a few takes on the sandwich elsewhere, including the lobster "Pullman" at Niche (1831 Sidney Street; 314-773-7755). Niche's not-too-shabby company on the list includes Per Se, the New York City outpost of acclaimed chef Thomas Keller.

- A tip o' the hat to George Mahe of St. Louis Magazine for the WSJ link. On Relish, Mahe reports on the latest career step for Chris Hoel, the one-time sommelier at the late Monarch (7401 Manchester Road, Maplewood) who left St. Louis for Thomas Keller's flagship restaurant, the French Laundry. Hoel has departed that restaurant to become a "senior wine adviser" at the Napa Valley wine merchant and advisory firm Soutirage.
