Capitalist Pig Opens in Soulard Today
Ron Buechele, owner of both Capitalist Pig and Mad Art Gallery, told Gut Check in June that his restaurant will be "completely sustainable".
"We're using Berkshire pork from small, family-owned farms," he said then. "In order for it to be certified 100% Berkshire, you have to be able to trace the pig back to the original Berkshire heritage in England.
"That's part of the goal. I can tell everyone where [their food] came from, the city, who was responsible for it."
The menu, available on the Capitalist Pig website, heritage pork ribs and pulled pork (Berkshire pork when it's available), certified Angus beef brisket and Amish chicken. The sides include baked beans, white cheddar mac & cheese and "crispy" potato salad.
