Yet another bricks-and-mortar establishment is joining the St. Louis food-truck fleet: Roberto's Trattoria (Lindbergh Boulevard & Baptist Church Road, south St. Louis County; 314-842-9998) soon will launch the awesomely named Roberto's Trucktoria.

"You want to know the real reason?" eponymous owner Roberto Zanti replies when Gut Check asks (innocently, we think) why a food truck.

"I'm 53 years old," he says. "Life is too short. My hometown in Italy has got palm trees, is right on the ocean. I work so hard in my life. You know what? Why don't I get a food truck and move to Florida, park the truck next to the beach."

Fans of Roberto's Italian cooking needn't worry. Roberto's Trucktoria will be roaming the streets of St. Louis, not Palm Beach, once it has passed its final inspections, which Zanti says should be within the next week or so.

What can diners expect from Roberto's Trucktoria?

"Pasta, lasagna, chicken spiedini," Zanti rattles off. "Roast-beef sandwiches."

He adds, "We're going to do something new in town, originally from my hometown in Italy: panzerotto."

Panzerotto, Zanti explains, is dough folded over fillings -- ham, mozzarella, kalamata olives and tomatoes -- and then fried on both sides. A fried calzone, essentially, he describes it -- though not a deep-fried calzone.

Look for Roberto's Trucktoria in many of the area's food-truck hotbeds, including downtown. (Gut Check will add Roberto's to our food-truck tracker, located on the right of this page, once the truck launches.) The truck will accept credit and debit cards as well as cash.
