Pairings Wine & Dessert Bar Bringing Fine Dining to Des Peres

Des Peres is getting its first wine bar next month. Pairings Wine & Dessert Bar is under construction at the former site of Jilly's Cupcakes A-Go-Go at 1131 Colonnade Center, as first reported by Feast. Owner Dave Pollmann actually ran the Jilly's outpost until it shut down earlier this year. Pollmann hopes to bring a unique concept to Des Peres -- fine dining that isn't at the mall.

"We've come up with the concept so that we can feature a lot of these wines paired with entries and seasonal menu items," Pollmann tells Gut Check. "We're really gonna focus on the wine and food and let people experience new wines and have some finer dining options in Des Peres, which they really don't have. It's a lot of bar food around here."

Pairings will offer over 50 wines that Pollmann says you won't find on typical wine list around town. He describes the interior as warm and cozy, and is adamant that there will be no televisions or "crap on the walls." There isn't a fryer in the kitchen either -- everything will be made fresh and locally sourced.

The lunch menu features a croque-monsieur panini, a lamb burger and a cranberry chicken club, to name a few. There's a whole list of wood-fired and flatbread pizzas, with gluten-free options. For dinner, there's pan-seared crispy duck breast in a red-wine reduction, grilled maple-bourbon salmon, herb-roasted Cornish game hen, rib-eye steak, and bell peppers stuffed with risotto, ground beef, lamb, chicken and parmesan.

The desserts come in trios or small portions -- Pollmann recognizes that usually by the time a server waves a dessert menu around, guests are stuffed. You can even create your own trio from a list that includes whipped cream mousse, bacon and blueberry bread pudding, caramel cheesecake rolled in a chocolate crepe -- the list goes on and on.

There will also be wine tastings and wine pairing parties, where a special menu will be developed around a wine flight. Pollmann has brought in Michael McGovern as executive chef from Columbia and Pairings' pastry chef is Katherine Benson.

"We are really pleased to give Des Peres and the surrounding communities an opportunity to try some really unique wines, lunch, dinner and of course, dessert," Pollmann says.

Pairings is having private parties and friends and families soft openings in late December and hopes to open to the public at the beginning of January.
