"You see that, Papa? It looks nothing like it did this morning!" says Amy Maddox across the room after a near-massacre of the pastry case at Brevan's Patisserie (1009 Century Drive; Edwardsville; 618-307-5772). With an extra hand from her dad every now and then, Amy runs the shop with her husband, pastry chef Dan Maddox, and they're all but sold-out of their pretty, individual desserts around 3 p.m. on Valentine's Day.

Brevan's, named after the couple's young sons Brendan and Evan, opened on January 27 in Edwardsville, and so far, it seems like they've settled nicely into the neighborhood. They live only a few minutes away, says Dan Maddox, and the transition from his prior career as a hotel pastry chef to owning his business means that he gets to spend more time with his family.

"The kids are here before and after school," says Maddox. "When I worked at a hotel, I never got to see them. They didn't really understand what I did before."

Growing up in a veritable dreamland of sweets sounds like every kid's dream, if you ask Gut Check. Clad in a clean, white chef coat, he boxes up some of his carefully crafted desserts for a family of four at the end of the Valentine's Day sugar rush while his wife preps items in the kitchen.

When asked about his own plans for the holiday, Dan explains that they'll all get to enjoy a flourless salted caramel chocolate cake he prepared for that evening. Amy is gluten-free, so expect to see some options of that variety in the shop.

"It's days like these I wish we had an espresso machine," says Maddox, who got up around 3:30 a.m. that morning to start his work day. The shop, however, does offer Goshen cafe alongside its daily baked offerings that include everything from individual opera and linzer tortes to chocolate and sprinkle dipped sugar cookies.

Set in a plaza of independent shops between a Mexican restaurant and a comic book store, Brevan's features the do-it-yourself style of decor you'd expect to see on an inspired Pinterest board. The homey touches accent the room's high ceilings and white walls, a proper setting for a cup of coffee and a sweet bite to eat.

Brevan's current hours are Monday through Saturday from 7 a.m. to 5 p.m. For more on Brevan's, follow it on Facebook.

@GBrumitt If Edwardsville becomes a haven for desserts and fine cuisine, we definitely won't complain. ;)

Their coffee toffee chip cookies are among the best cookies I've ever eaten.
